Baked Ziti
Saucy tubular pasta in three cheese layers with a golden top.
How do you make baked ziti with the right texture?
Baked ziti is an Italian-American oven pasta made with tomato sauce, tubular pasta, ricotta and melting mozzarella. Boil the ziti until just shy of al dente, coat it with plenty of sauce, then layer it with the cheeses. Bake until the casserole is bubbling, and give it a short rest so each serving holds together without turning dry or mushy.

01
Make the sauce
15Heat 25 mL olive oil in a wide saucepan. Soften 130 g onion for 5 minutes and add 15 g garlic for 30 seconds. Cook 25 g tomato paste briefly, then add 800 g crushed peeled tomatoes, oregano, red pepper flakes and 3 g of the salt. Simmer gently until moderately thick.
-
02
Undercook the pasta
9Heat the oven to 190°C (375°F) conventional. Boil 450 g ziti in plenty of water seasoned with the remaining 5 g salt, about 2 minutes less than the package’s al dente time. Reserve 100 mL cooking water, then drain.
-
03
Prepare the cheese
3In a bowl mix 300 g drained ricotta, 40 g of the Parmesan and 1 g pepper. Set out 250 g mozzarella and remaining 40 g Parmesan for layering.
-
04
Layer and bake
25Toss pasta with most of the tomato sauce and a splash of pasta water if needed. Spread one-third in a 23 × 33 cm oven dish; dot with ricotta and scatter some mozzarella. Repeat twice and finish with reserved tomato sauce, remaining mozzarella and Parmesan. Bake uncovered 20–25 minutes until bubbling and lightly browned.
-
05
Rest and serve
8Let the baked ziti stand for 8–10 minutes, then scatter 15 g torn fresh basil over the top. Spoon out six equal portions while still hot.
Mastery Guide
Review the technical details, common mistakes and correct practices that determine the recipe result.
Critical Tips
Underboil first
Pasta continues cooking in the tomato sauce in the oven.
Best practice: Stop the boil about 2 minutes early.
Keep sauce sufficient
Dry pasta absorbs fluid while baking.
Best practice: Coat every tube and finish with sauce on top.
Common Mistakes
Using watery ricotta
Excess whey can puddle in the baking dish.
Best practice: Drain ricotta before layering.
Overbaking
Cheese dries and pasta becomes tough.
Best practice: Remove when the middle bubbles and reaches 74°C.
Why Does This Happen?
Pasta absorbs sauce
Starch granules continue swelling during baking.
Best practice: Slightly undercook and use ample tomato sauce.
Top browns
Mozzarella and Parmesan proteins brown in dry oven heat.
Best practice: Bake uncovered near the end.
Mayana Tips
Build three even layers
Consistent distribution prevents cheese-only bites.
Best practice: Divide pasta and cheese into thirds in advance.
Rest before serving
Settling sauce helps tidy portions.
Best practice: Wait 8 minutes after the oven.
Ingredients & Measurements
Low-moisture mozzarella
It melts without flooding the casserole.
Best practice: Use drained low-moisture shredded cheese.
Tubular pasta
Ziti channels tomato sauce inside each tube.
Best practice: Choose ziti or rigatoni rather than delicate thin pasta.
Cooking Techniques
Two-stage pasta cooking
Boiling starts hydration and oven cooking finishes it.
Best practice: Keep the pasta firm before baking.
Layered casserole heating
A moderate oven heats the centre while browning the surface.
Best practice: Check the centre, not only the cheese colour.
How to Store and Make Baked Ziti Ahead

Frequently Asked Questions About Baked Ziti
Can I substitute rigatoni?
Yes. Rigatoni holds sauce well; use the same dry weight and shorten the initial boiling by about 2 minutes relative to its package al dente time.
Why does baked ziti become dry?
It needs enough sauce and slightly undercooked pasta, because the oven absorbs moisture. Save pasta water and keep the top sauced.
Can I assemble it a day ahead?
Yes, assemble without baking and refrigerate covered. Bake from chilled until heated thoroughly to 74°C (165°F); the cooking time will be longer.
