Falafel Rice Bowl
A fresh, satisfying bowl with crisp falafel and a bright sesame dressing.
How do you make falafel rice bowl with the right texture?
A falafel rice bowl brings together crisp chickpea falafel, fluffy long-grain rice, chopped vegetables and lemony tahini sauce. Soak dried chickpeas overnight, pulse them to coarse crumbs with herbs and spices, then fry small patties until golden. Cook and rest the rice separately, and assemble everything just before eating so the falafel stays crisp and the vegetables stay fresh.

01
Soak the chickpeas ahead
5Cover 250 g dried chickpeas in plenty of cold water and refrigerate for 12–18 hours. Drain completely; pat dry. Never start this classic raw-chickpea falafel method with canned cooked chickpeas, which are too soft for the same texture.
-
02
Mix the falafel
12Pulse drained chickpeas with 100 g onion, 25 g parsley, 20 g coriander leaves, 15 g garlic, cumin, ground coriander, 4 g salt and black pepper until it resembles coarse damp crumbs, not smooth hummus. Chill briefly if warm, then stir in 3 g baking powder before shaping.
-
03
Cook the rice
18Put the rinsed 240 g dry rice in a saucepan with 360 mL water and 4 g salt. Bring to a boil, cover, reduce to low and simmer about 12–15 minutes. Remove from heat and rest covered 5 minutes; fluff with a fork.
-
04
Fry the falafel
10Heat 450 mL frying oil in a deep stable pan to 175°C (350°F), with ample freeboard. Shape the mixture into 12 compact patties. Fry in small batches for 3–4 minutes per batch until deeply golden and cooked through; allow oil to recover between batches. Drain on a rack.
-
05
Whisk sauce and assemble
8Stir 75 g tahini, 45 mL lemon juice, 4 g grated garlic and 2 g salt together; whisk in about 75 mL cold water until pourable. Divide rice and 12 falafel among four bowls, add cucumber, tomatoes, red onion and parsley, and drizzle with tahini sauce.
Mastery Guide
Review the technical details, common mistakes and correct practices that determine the recipe result.
Critical Tips
Use soaked raw chickpeas
Cooked canned chickpeas are too soft for the standard deep-fried falafel.
Best practice: Soak dried chickpeas ahead and drain fully.
Maintain oil temperature
Cool oil increases fat uptake and weakens the crust.
Best practice: Fry small batches near 175°C.
Common Mistakes
Pureeing smooth
Excessively fine chickpea paste becomes dense.
Best practice: Pulse to a coarse granular texture.
Overfilling the bowl early
Moist vegetables soften falafel and rice.
Best practice: Assemble immediately before eating.
Why Does This Happen?
Coarse particles bind
Hydrated raw chickpeas cling when pulsed and compressed.
Best practice: Let the mixture rest briefly before shaping.
Tahini thickens at first
Lemon and water change sesame paste emulsion structure.
Best practice: Whisk steadily and continue adding cold water gradually.
Mayana Tips
Prepare components separately
Rice, falafel and salad have different holding needs.
Best practice: Keep warm components and raw vegetables separate.
Form equal portions
Uniform patties brown more consistently.
Best practice: Make 12 patties of similar thickness.
Ingredients & Measurements
Dried vs canned chickpeas
Pre-cooking changes water and starch behavior.
Best practice: Buy dried chickpeas for this version.
Tahini consistency
Sesame paste varies by brand and storage.
Best practice: Adjust cold water gradually to a flowing sauce.
Cooking Techniques
Coarse pulsing
Short processor bursts protect falafel texture.
Best practice: Stop before the mix becomes puree.
Controlled deep frying
Small batches keep a hot crust while the interior cooks.
Best practice: Use a thermometer and rack to drain.
How to Store and Make Falafel Rice Bowl Ahead
- Serving temperature
Serve freshly made at a food-safe temperature appropriate for this dish.
- Refrigerator storage
Cool cooked rice promptly and refrigerate in shallow boxes; use within 24 hours; refrigerate falafel and dressing separately and do not store assembled raw vegetable bowls warm.
- Room-temperature limit
Do not leave perishables or cooked rice unrefrigerated longer than 2 hours (1 hour above 32°C/90°F).
- Reheating
Reheat refrigerated leftovers until hot throughout; use 74°C (165°F) where applicable.
- Make-ahead steps
Prepare the components in advance and refrigerate safely, keeping crisp or fresh toppings separate until serving.
- Serving suggestion
Herb-rich falafel over steamed rice with fresh cucumber, tomato and lemon-tahini sauce.
Frequently Asked Questions About Falafel Rice Bowl
Can I use canned chickpeas?
Not for this traditional uncooked-chickpea falafel formula; canned chickpeas form a wet, fragile paste. Use a recipe developed specifically for cooked chickpeas instead.
Why do my falafels break apart?
The chickpeas may be too wet or processed too smooth, or the oil too cool. Drain thoroughly, pulse coarsely and fry in batches at about 175°C.
Can I prepare the bowl ahead?
Cook rice and falafel ahead, cool them rapidly and refrigerate separately. Chop vegetables and thin the tahini sauce just before serving.
